FUSSILLI IN SUN DRIED TOMATO SAUCE

CLASSIC PENNE ARRABIATA

  • Cooking Time: 10 minutes
  • Serves: 4 people

INGREDIENTS

  • 3 cups cooked fusilli
  • For the sauce
  • ¼ cup sun dried tomatoes
  • ¼ cup lightly roasted pine nuts
  • 1 tsp chopped garlic
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 cup cream
  • 1 cup milk
  • Salt to taste

METHOD

  1. Soak the sun dried tomatoes in ¼ cup of warm water.
  2. Blend the tomatoes, pine nuts, garlic, chilli powder, olive oil into a smooth paste.
  3. Simmer the sun dried tomato paste, cream and milk in a sauce pan. Add salt.
  4. Toss the pasta in it.
  5. You can mix in vegetables of your choice.
  6. Garnish with cheese. Serve hot.

Note : In case of using oil preserved sun dried tomatoes, do not blend in the olive oil to the paste.
