WALNUT MINT-BASIL PENNE

  • Serves: 2 people

INGREDIENTS

  • 1 ½ cups penne pasta
  • ¼ cup walnut
  • ½ cup fresh basil leaves
  • ¼ cup mint leaves
  • 1 onion, copped
  • ½ cup sliced bell peppers
  • ½ cup cream
  • 4 tbsp milk
  • 4 tbsp grated cheese
  • ½ tsp pepper
  • Salt, as desired

METHOD

  1. Boil the pasta, drain the water, sprinkle with oil and keep it aside.
  2. Blend walnuts, basil and mint leaves in a blender.
  3. To prepare the sauce, melt the butter in a saucepan. Add onions and cook till soft, toss in the bell peppers.
  4. Add walnut-basil paste, cream, milk, cheese, salt and pepper.
  5. Add the pasta. Garnish with cheddar cheese and serve hot.
