CLASSIC PENNE ARRABIATA

CLASSIC PENNE ARRABIATA

INGREDIENTS

  • 2 ½ cups penne pasta
  • 2 tbsp olive oil
  • 1 onion very finely chopped
  • 2 garlic flakes, crushed
  • ½ cup ready-made tomato puree
  • 500 gm tomatoes
  • 2 tbsp Fresh parsley
  • 1 tbsp chopped celery
  • ½ bell pepper chopped, ½ cup broccoli florets, ½ corns diced
  • 1 tsp dried oregano
  • 1 tsp sugar
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 teaspoon Red chilli flakes

METHOD

  1. Boil the pasta as mentioned in cooking instructions and set aside.
  2. Blanch the tomatoes in boiling water for 4-5 minutes. Drain the water, peel and puree the tomatoes. Sieve the puree.
  3. Heat 1 ½ tbsp of olive oil in the pan. Add the onions and garlic cook, until the onions turn light brown.
  4. Add the red chilli flakes. Add the fresh and ready-made tomato puree, oregano, salt, sugar and pepper. Add the vegetables. Toss in the cooked penne pasta. Avoid using a spoon or spatula since it may cause the penne to break. Garnish with parsley. Serve hot.
